These pancakes are as simple as can be and take a matter of minutes. They’re gluten and dairy free as well as being paleo and synfree if you’re doing Slimming World. At only 227kcal including some honey and blueberries these are the ultimate guilt free breakfast.
Top with whatever you fancy: fruit, honey, chocolate chips, maple syrup… Everything tastes great!
This recipe is cups rather than grams as who needs to do things with scales in the morning?!
1/2 cup of oats
2 large eggs
2 medium bananas (as ripe as possible)
A pinch of salt
A teaspoon of cinnamon
You will need:
1 non stick pan
- 1 Whiz up the oats in a food processor to make a flour and then blend everything together, either in the food processor or by simply mashing the bananas and whisking in the eggs
- 2 Lightly fry in a non-stick pan with some cooking spray
- 3 Enjoy with the toppings of your choice
